FloVision Primal: Chump & Wing Angle

Incorrect cuts to both the chump and wing angle can lead to diminished sirloin primal value. Based on customer specifications, chump angles should stay natural at approximately 15°, or squared at 4°, and wing angles should be squared at 0°. Deviation from these angles causes yield to be lost to lower-value primals or trimmings directed to visual lean lines.

FloVision AI enables floor and station managers to monitor chump and wing angles in real-time across all butchering stations and act on incorrect cuts to guarantee customer specifications are satisfied. The dashboard consolidates chump and wing angle data to identify trends and confirm primals are trimmed to optimize profitability.
